
Ingredients:
- 1lb ground lamb
- 1 clove garlic
- 1 bag of farro (TJ’s 10 minute)
- 1 16 oz chicken stock
- 1 16 oz chicken broth
- 1 clove garlic
- 1 bell pepper
- 1/2 red onion
- 1 cucumber
- 1 jar sundried tomatoes (strained, but save the oil for the salad dressing)
- 1 jar pitted kalamata olives (strained)
- 1 container of feta cheese
- Parsley (Chopped)
Instructions:
- Start browning the ground lamb with the garlic and a drizzle of olive oil. Add the chicken stock and broth to a pot and bring it to a boil. You will use this for the farro, so just follow the nstructions on the packaging.
- While those two are cooking, chop up the veggies.
- Once lamb and the farro are done cooking, let cool.
- Assemble all ingredients.
- Top w/ half the dressing. Use the other half of the dressing to top your servings throughout the week. Add a scoop of Whole Fat Greek Yogurt when serving as well.
