
Ingredients:
1 lb Ground Chicken
1 egg
3/4 c. parmesan
1/2 c. feta
t Tablespoons chopped dill
2 teaspoons chopped garlic
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
Preheat oven to 400 degrees. Mix all ingredients above and form into meatballs. Mixture will be moist as it doesn’t have breadcrumbs (feel free to add if needed). Spray cookie sheet with non-stick spray (we use avocado oil spray). Bake in oven for 20-25 minutes.



Tzatziki (Yogurt Sauce):
Ingredients:
1 c. Chobani Whole Fat Yogurt
1/2 Lemon (juiced)
2 teaspoons chopped garlic
2 Tablespoons dill
1/4 cup thinly sliced cucumbers
Mix all together and serve with the meatballs!
This is truly one of my go-tos for quick and easy meals. I add the meatballs to an arugula salad with kalamata olives, feta, cucumbers, fresh cracked pepper and tzatziki.
We want to start trying for baby no. 2 next summer, so I have about 30-40 lbs to lose by then! I am sure I could have a child at my current weight, BUT we had a scary go with Henry (pre-eclampsia, HELLP, early delivery)and I want to be in tip top condition for the next one.
