
Ingredients:
- 3 lbs ground beef
- 1 yellow pepper , diced
- 1 red bell pepper , diced
- 1 medium onion , diced
- 3 small jalapeno peppers , diced (seeds removed for less spice)
- salt and pepper
- 2 teaspoons garlic powder
- 1/3 cup chili powder
- 1 1/2 Tablespoons cumin
- 1 1/2 cups ketchup
- 3 Tablespoons lime juice
- 1 Tablespoon brown sugar
- 1 Tablespoon Worcestershire sauce
- 2 teaspoons white vinegar
- 1 1/2 teaspoons Grey Poupon
- 1 24 oz. Passata (Strained Seedless Tomatoes)
- 1 c. Tomato Juice
- 16 oz can kidney beans
- 1 24 oz. can fire roasted tomatoes
Instructions:
Brown beef in a Dutch oven over medium heat. While the beef is browning, start dicing your veggies and assembling your spices! Once the beef is cooked, remove from Dutch oven and set aside. Add a touch of avocado oil and then add onions, peppers, jalapeño to pan! Cook 2-3 minutes. Add all other ingredients. Simmer on low for 1-2 hours.Top soup with sour cream, shredded cheddar and some chives. Or little jalapeño to make it have more of a kick!
